Sauerkraut of Colmar

Ingredients :
- 1 kg of sauerkraut fresh raw.
- 2 spoonfuls with soup of lard or duck or goose grease.
- 1/2 liter of bubble (Kub).
- 2 glasses of Alsace white wine.
- An onion.
- An apple.
- 10 bays of juniper.
- Salt, pepper.
Preparation :
This recipes enables you to make only cabbages believed to make a success of a marvellous sauerkraut.

To dissolve in a pot 4 spoonful of duck or goose grease or lard.

To cut onion in fine plates, to make them gild.

To add sauerkraut then not washed and to cook it during some minutes by having well care to stir up it with a spatula out of wooden.

To add 2 glasses of Alsace white wine and cut apple of small pieces. To add bays of juniper.

To then pour the half liter of bubble; to salt, pepper.

To let cook at least 60 minutes (1h 00) with soft fire.
Recommendation :
Especially don't wash the sauerkraut !

Recommended Wine : Riesling or a wine of Alsace of your choice
