Cheeks of pork in Curryon

Ingredients :
- 1,8 kg of cheeks of pork cleaned and parées*.
( The cleaned feet will be kept(guarded) for the cooking of cheeks)

- 500 g of heads of cultivated mushrooms cut in Duxelles ( tiny made squares) has the hand or in the mixer.
- 1 carrot and 1 big onion cut there mirepoix ( small squares).
- Flower of thyme.
- 1 bay leaf.
- 2 soupspoons of flour - ½ bottle of syrupy white wine (muscatel wine or the others).
- 3 spoons soup of Curryon.
- ½ lemon juice.
- 2 chopped shallots.
- 30 cl of single cream (Fleurette).
- Salt and pepper of the mill.
Preparation :
Cheeks of pork simmered, duxelles of mushrooms and finish in Curryon.

1) switch on your oven in 140 ° Celsius ( th 4/5 ).

In this past sauce add your spoons of Curryon.
