Chocolate fondant

Ingredients :
- 95 g of dark chocolate to patissier ( 70 %).
- 4 eggs.
- 4 egg yolks.
- 95 g of butter.
- 75 g of caster sugar.
- 75 g of flour.
- 10 g of powder of cocoa.
Preparation :
Preheat your oven in 225 °.

Mix in a salad bowl 2 egg yolks and 2 whole eggs.

Incorporate the sugar and make clear the mixture.
Add the powder of cocoa.

Melt in the bain-marie, the chocolate and the butter.
( Be careful, the chocolate has to melt slowly in 28 °, no more).

When the mixture is melted the sifted flour*.

Mix both preparations.

Butter and flour 4 ramekins. < Br / > < br / > Overturn into small ramekins and put in the oven 8 in 12 minutes (0h 08).

And slurp!

Recommendation :
* To put the flour in a sieve in the very fine railing and so she pours in drizzle without risk then of lumps.
