Cod brandade I

Ingredients :
750 g of desalted cod.
- 3 cups of olive oil.
- 3 cups of whole milk (or 2 cups low-fat milk and a tablespoon of sour cream).
- Salt, pepper, nutmeg.
Preparation :

The true recipe, as in the south !

Cut into the well desalted cod.

Put in a saucepan, cover with cold water, heat. Remove when boiling will occur.

The drain and carefully remove the skin and bones, the pluck and keep warm.

In a small saucepan, heat milk, and another olive oil.

Put the cod into pieces and thinned in a pan and with a spatula to mash incorporating a spoonful of milk and a tablespoon of oil without stopping until all liquid two.

After obtaining a smooth paste, firm and very white, season with salt (be careful), pepper and grated nutmeg.
