Salad of white dandelions and foie gras

- 200 g of white dandelions.
- 25 g of foie gras.
- 1 spoonful of olive oil.
- 1 spoonful of sunflower oil.
- 1 spoonful of hibiscus vinegar.
- Red and grey salt of pepper of the mill.
Prepare your dandelions by splitting the rest of root.
Wash them in 5 waters and summits drain them and dry.
Prepare the vinaigrette by beginning with oil then vinegar and finally salt and pepper. Mix with a whip.
Cut the foie gras in small dice.
At the last moment, mix the dandelion with the vinaigrette.
Then add on the top the small dice of foie gras.
The dandelion maybe replaced by the lamb's lettuce or the rocket either still of the frizzy.
Recommended Wine : Fronsac rosé
