Carpaccio of holy jacques, truffle and lime

Ingredients :
- 4 scallops of beautiful size.
- 10 g of cracks of truffle.
- 1 ripe lime.
Preparation :
Before serving :

Wash scallops and dry them.

Cut them very finely with a disentangled knife.

Arrange them in the plate.

Strew on every walnut, a little crack of truffle.

Decorate the plate of a slice (or of a quarter) of lime.

Two possibilities :

is every person will decorate with a drop of lime, every slice of scallop,


you arrange, before serving, a drop of lime on every slice of scallop.

Sure refinement !!!
Recommendation :
Neither salt, nor pepper, nor oil.
