Irish stew

Ingredients :
In homage to the family Ward and particularly to Joyce

- 1,250 kg of necklace of lamb.
- 1 kg of potatoes.
- 300 g of carrots.
- 4 onions.
- 1 bouquet garni.
- Salt and pepper.
Preparation :
Cut the necklace of lamb in pieces as for a stew.

Peel potatoes and cut them in slice: onions and to slice thinly them.

In a casserole, refreshed successive potatoes, carrots, meat and pieces of onions.

Cover with water, salt, pepper and add the bouquet garni.

Cover the casserole and cook over a low heat during 90 minutes (1h 30) .
